Herb Teas from your Tea Garden

Today - some herbal tea blends. First, I am going to clue you into the measurement of herb blends - used for teas, decoctions, syrups, and tinctures. I use the term 'Part" and a part can be as big or as small as you want as long as it is all the same size or weight. For instance to make one cup of herb tea you might use

1 part apple mint
1 part lemon verbena
1 part bergamot

in this case, each part = 1/2 teaspoon dried herb or 1 teaspoon each of fresh

To make a 4 cup pot, each part would = 1 teaspoon dried herb or one tablespoon each of fresh herb.

Now for the teas: The above tea is a very smooth and flavourful afternoon tea. Don't be afraid to experiment - there are no set rules to tea blending - it is all in finding a signature blend to call your own

Sleepy Tea
1 part chamomile flowers
1 part catnip
1 part lemon balm
Cover herbs with boiling water, cover and steep for 5 minutes - strain, add honey if preferred

Cold Tea
1 part Apple Mint
2 part Orange spice thyme
1 part Catnip

Cover herbs with boiling water, cover and steep for 5 - 10 minutes - strain, add honey and lemon - make a pot of this and drink through out the day

Digestive Tea

1 part Apple miint
1 part pinapple sage
1 part betony
1 part lemon verbena
Cover herbs with boiling water, cover and steep for 5 minutes sweeten if preferred

Headache Tea
1 part betony
1 part angelica
1 part bergamot
1 part chamomile

Cover herbs with boiling water cover and steep 5 minutes - sweeten if preferred.
